Archive description

Here, we conducted a longitudinal multi-omics crossover trial with 68 participants, utilizing strict dietary standardization to isolate the effects of rice versus wheat. We demonstrate that a single staple change is sufficient to restructure the gut microbiome, driving dynamic responses in specific bacterial taxa. Notably, habitual wheat consumers exhibited significantly higher glycemic variability after switching to rice, with Bifidobacterium longum serving as a pivotal modulator of this staple-dependent glycemic stability.
